The Aigo Fish
Aigo is a fish that feeds mainly on seaweed. Because it contributes to the barren-ground phenomenon known as isoyake, it has long been called a "nuisance of the sea." Its distinctive aroma and venomous fins also make it difficult to handle, so it almost never reaches the market. Through years of research, however, Koyano Fisheries Co., Ltd. established rigorous freshness management and its own processing method — removing any off-notes and drawing out Aigo's naturally refined umami. Please try "Koyano Aigo," a legendary white fish you can taste at our restaurant and nowhere else in Japan.

Carefully selected Aigo is shipped live and direct from Koyano Fisheries in Yawatahama, Ehime. It reaches Aigoya in peak condition, with its outstanding freshness fully intact.

With skills honed over many years, our sushi chefs draw out the very best of Aigo's delicate umami and texture. The preparation, the seasoning and the exquisite balance with the shari are all tuned to let Aigo shine. Please enjoy a bowl only Aigoya can serve, crafted with care in every detail.

Signature Shari (Rice)
To highlight Aigo's delicate umami, our sushi chefs use a special shari, exacting even in the balance of vinegar and the way the rice is cooked. It is prepared so that Aigo and shari harmonize in the mouth.
